Strawberry Cakes Forever

The Baked Fresh Recipe Box: Strawberry Icebox Cake

Want to prepare a delicious dessert to share with friends at family at your Memorial Day celebration this weekend? You can’t go wrong with an easy-to-make (not to mention no-bake) icebox cake!

Ingredients:

1 qt. Heavy Cream

2 Tbls. Granulated Sugar

1 1⁄4 cups Strawberry Puree

Nabisco Chocolate Wafer Cookies (about 100)

Directions:

1. Pour the heavy cream into the mixer bowl. With the mixer on low, slowly pour in the sugar. Begin whipping on a medium high speed until the cream thickens slightly in the middle. Once the cream begins to thicken, whip on high speed for 30 seconds to 1 minute until the cream is very thick.

2. Remove the mixer bowl from the mixer stand, gently add the strawberry puree folding into the whipped cream until fully combined. Do not stir the whipped cream or whip in the mixer again.

3. Using your off‐set spatula, begin by putting a very thin layer of cream on the doily, spinning and smoothing the cream out to the inner edge of the doily. Use just enough cream for the first layer of wafers to stick to the doily.

4. Take 7 wafer cookies and place around the edge of the whipped cream and one in the center. Be sure the wafers are of equal distance from each other.

5. Place about 1⁄2 cup of cream for your first layer, using the off‐set spatula, smooth the cream out almost out to the edge, until you can barely see the edge of the wafer.

6. For the second layer use 7 more cookies placing them directly in between the first layer of wafers, making sure they are of equal distance apart from each other.

7. With the following layers of the cake stack the cookies like bricks, for example, the 3rd layer of wafers will be placed directly on top of the first layer of wafers using about 1⁄2 of whipped cream per layer.

8. Continue with this pattern until the cake is about 10‐12 layers high. 9.

9. Store in a Tupperware container in the refrigerator for 5 to 6 hours before serving.

Bobbie’s Kitchen: Magnolia Bakery’s Brand New Coconut Cream Pie

Pie is my absolute favorite dessert and there is no better classic cream pie than coconut! Since I started at Magnolia Bakery years ago, I have been wanting to add more pies to the menu. So far, 2014 has been a pie-filled year, from our caramel apple hand pies to our brand new coconut cream pie. I love the combination of creamy texture with coarse coconut and, of course, the flavor.

To perfect the Magnolia Bakery coconut cream pie recipe, I started with an old recipe that I used to make years ago. When I gave it a first go, I felt it was lacking the coconut flavor I desired, so I went back to the drawing board with a few tests.

In the first test, I added coconut to the crust, which gave it a great texture. In the second, I added coconut milk to the custard, but I still wanted more flavor!

Finally, in the third test, I found the trick. I added sweetened coconut to the coconut milk as it was heating – the result was coconut perfection!

Magnolia Bakery’s coconut cream pie bites are the perfect portion to satisfy your coconut craving. They have a great proportion of pie crust to filling, resulting in a heavenly combination of crispy, creamy, and coconut.

The Michael J. Fox Foundation Cupcake is Back at Magnolia Bakery

From April 1-8, we will once again be offering The Michael J. Fox Foundation cupcake at all of our US locations. With every MJFF cupcake sold, we will be donating $1.75 to The Michael J. Fox Foundation, which has thus far raised over $400 million for research for Parkinson’s disease.

How to Make Your Own Clover Cupcake

Make St. Patrick’s Day your lucky day with a special clover cupcake! This is a simple cupcake decoration from our creative director, Linda Facci, that you can create on a “flat-top” iced cupcake.

To make a clover cupcake, you’ll need:

- Cupcake
- Green Sanding Sugar
- A picture of a clover (approx. 1” wide) printed on cardstock
- Exacto Blade

1. Print clover on card stock

2. Cut out clover (save the cutout clover)

3. Ice your cupcake with a flat top. As an option you can cover the sides of the cupcake with sanding sugar

4. Center your die-cut cardstock on top of your cupcake

5. Sprinkle your sugar on top of open area

6. Lightly pat down the sugar

7. Gently lift the cardstock to reveal your clover

8. Admire (and eat) your very own clover cupcake!

Tips:

- Make sure your cupcake is freshly iced. The sugar will better adhere to cupcake.

- If your icing has already dried, you can lightly pat some water on the area where the sugar will be placed.

- Try icing your cupcake in a different color such as yellow or mint green.

- Try coating the sides of your cupcake with white sugar.

- Save the cutout clover and do the reverse on the cupcake!
